This recipe is actually for sweetcorn bread, but sometimes I use it to make muffins in my large, 12-hole muffin pan. They are soft, moist, and delicious.
Ingredients:
500 ml cake flour
15 ml baking powder
2 extra-large eggs, beaten
250 ml Cheddar cheese, grated
70 ml milk
420g can of cream-style sweetcorn
Method:
Preheat the oven to 180 degrees C.
Sift together all the dry ingredients.
Mix in the eggs, cheese, milk, and sweetcorn to form a soft dough.
Spoon the mixture into a well-greased 12-hole large muffin pan.
Bake for 40 to 45 minutes until golden brown.
For sweetcorn bread, spoon the mixture into a well-greased loaf pan.
Bake for 45 to 60 minutes, until golden brown.
