Sweetcorn Muffins or Sweetcorn Bread

Hello Everyone!

This recipe is actually for a sweetcorn bread, but sometimes i use it to make muffins in my large, 12 hole muffin pan. They are soft, moist and delicious.

Ingredients:

500 ml cake flour
15 ml baking powder
2 extra large eggs, beaten
250 ml Cheddar cheese, grated
70 ml milk
420g can cream style sweetcorn

Method:

Preheat the oven to 180 degrees C.
Sift together all dry ingredients.
Mix in the eggs, cheese, milk and sweetcorn to form a soft dough.
Spoon the mixture into a well greased 12 hole large muffin pan.
Bake 40 to 45 minutes until golden brown.

For sweetcorn bread, spoon the mixture into a well greased loaf pan.
Bake 45 to 60 minutes, until golden brown.
