Nothing beats the aroma of freshly baked bread or rolls. This is one of my favorite recipes for super soft and light rolls, that is perfect with any meal.
3 TBS butter, margarine or oil
3 TBS sugar
1/2 cup hot water
1/2 cup milk
1 egg beaten
1 tsp salt
3 cups cake flour
1 packet instant yeast
Preheat the oven to 70 degrees C.
Place the flour in a large bowl. Place the hot water, milk and margarine in a jug and add the sugar and salt. Stir until dissolved. Add the yeast to the lukewarm milk mixture and stir. Lastly, add the beaten egg to the milk mixture.
Pour the milk mixture into the flour in the bowl.
Knead the dough by hand, or an electric mixer, with dough hooks attached, until the dough is smooth and elastic. Cover the dough with plastic wrap and let it rest for 10 minutes.
Place the dough on a lighty floured board and shape into two spirals.
Cut 6 pieces off each spiral and shape into round rolls. Place the rolls on a prepared baking tray or oven dish. Brush water over the rolls and put the tray in the oven. Turn the oven off and allow the rolls to prove until double in size, about 20 minutes.
Remove the rolls from the oven and preheat the oven to 190 degrees C.
Bake the rolls in a preheated oven for 15 to 20 minutes until golden brown. Serve warm. Store in jiffy bags.
Makes 12 delicious and soft rolls.
